About the role#
Grand Traverse Resort and Spa is seeking culinary interns and externs to join our kitchen team. This role involves active participation in food preparation and production for the resort. You will coordinate with kitchen staff to maintain standards while gaining hands-on experience in a professional environment. This is a paid, on-site position with rolling start dates.
What you'll do#
- Estimate food consumption and handle requisitions or purchases.
- Receive and inspect food supplies to ensure quality and quantity standards.
- Prepare and cook food according to established recipes.
- Cut, trim, and bone meats, fish, and poultry.
- Portion cooked food and provide instructions on garnishing.
- Maintain sanitation and safety standards in your work area.
- Rotate and store food items to minimize waste.
- Clean and sanitize your station following Health Department guidelines.
- Assist in training staff and act as a lead on prep and kitchen training.
- Complete opening and closing procedures.
What you'll need#
- Current enrollment in a university, college, or community college with the ability to receive academic credit for this internship.
- At least 1 year of experience in a food preparation role.
- Culinary training or equivalent production experience.
- Current safe food handling certification or the ability to obtain one within 90 days of hire.
- Knowledge of safety rules for kitchen equipment and maintenance.
- Understanding of local, state, and federal health and sanitation laws.
- Professional communication skills in both oral and written forms.
