This paid internship offers an opportunity to gain comprehensive experience in the daily operations of a culinary department within a resort and country club environment. Interns will rotate through various areas including line kitchen operations, garde manger, baking and pastry, and stewarding. You will work closely with a mentor to develop skills in culinary execution, management, and the coordination of large-scale events.
What you'll do#
- Assist with cooking and station management across breakfast, lunch, and dinner services.
- Coordinate the planning and execution of large-scale banquet events and off-site catering functions.
- Prepare and display a variety of warm and cold desserts for buffet presentation.
- Operate dish machines and maintain proper sanitation standards, including equipment setup and breakdown.
- Manage food storage, including product inspection, rotation, and maintaining refrigerator and freezer cleanliness.
- Conduct daily inventory and assist with ordering based on production sheets.
What you'll need#
- A working understanding of culinary operations and menu preparation.
- Knowledge of sanitation standards and safety practices.
- Experience or interest in inventory management.
- Ability to execute banquet events and work effectively in a team environment.
- Enrollment in or completion of relevant coursework in fields such as Business Administration, Nutrition, Agriculture, or Civil Engineering.
