About the role#
This is a 6-month internship focused on food preparation, production management, and kitchen operations. You will work on-site in Kohler, Wisconsin, from May through October 2027. This is a paid, part-time position with shifts scheduled between 4:00 am and 8:00 pm, including weekdays and weekends.
What you'll do#
- Prepare food to culinary standards and fulfill order tickets while maintaining service pace.
- Produce quantities based on forecasts and develop daily specials to support the food program.
- Manage production using checklist systems and ensure ordering sheets are followed.
- Rotate food stocks using the first-in, first-out method and conduct monthly inventory.
- Lead the kitchen team when the unit chef is absent and demonstrate leadership within your work group.
- Maintain food safety by monitoring temperature danger zones and sanitizing equipment.
- Assemble, clean, and operate kitchen equipment while reporting any maintenance issues.
- Follow safety protocols, including wearing approved safety shoes and practicing proper knife handling.
What you'll need#
- Current enrollment in a culinary degree program or relevant coursework.
- Advanced knowledge of culinary terms, techniques, and sanitation principles.
- Completion of a sanitation course.
- Competency in breakfast cookery, vegetable prep, starches, rice, pasta, and sandwiches.
- Experience with advanced meat, fish, and poultry fabrication, along with stocks, soups, and sauces.
- Familiarity with banquet, buffet, a la carte, and plated service styles.
- Ability to develop production and problem-solving checklists.
- Fluency in English and authorization to work in the United States without sponsorship.
