About the role#
This summer 2027 internship offers a hands-on opportunity to work with the Analytical Characterization and Texture Science team in Bridgewater, New Jersey. You will explore how plant proteins and texturizing ingredients interact within food systems. Working alongside the Protein Fortification innovation team, you will use confocal microscopy and other analytical techniques to connect food microstructure with product performance.
What you'll do#
- Prepare and evaluate model food systems that contain pulse proteins and hydrocolloids.
- Support confocal microscopy experiments by preparing samples and collecting images.
- Perform laboratory measurements such as viscosity, emulsification, and texture analysis.
- Organize and analyze experimental results to identify relationships between ingredient interactions, microstructure, and product performance.
- Maintain laboratory records while following safety and experimental procedures.
- Collaborate with scientists to discuss findings and plan next steps.
- Summarize and present your work and recommendations at the end of the internship.
What you'll need#
- Progress towards a bachelor’s, master’s, or PhD in food science, chemistry, biochemistry, materials science, or a related field.
- Completion of at least two years of undergraduate coursework.
- Hands-on laboratory experience gained through coursework or other settings.
- Unrestricted authorization to work in the United States.
