About the role#
This internship provides hands-on experience in restaurant management and event operations at Grand Traverse Resort and Spa. You will support restaurant managers and the director in the daily running of a dining outlet. The role covers both front and back of house operations, including opening and closing procedures, hosting, serving, and food preparation. You will also support the banquet team to maintain service standards.
What you'll do#
- Supervise and train staff including bartenders, servers, greeters, bussers, and cashiers.
- Monitor guest satisfaction and feedback daily.
- Control labor schedules based on budgeted costs and manage facility resources.
- Submit operational paperwork such as payroll, purchase orders, work orders, and disciplinary forms.
- Ensure compliance with sanitation laws and safe alcohol management practices.
- Operate the MICROS computer system and balance shift-ending cash drops.
- Order supplies and maintain par levels.
- Attend bi-weekly intern meetings and complete assigned internship projects.
- Assist with clearing tables and performing restaurant opening and closing duties.
What you'll need#
- Current enrollment in a university, college, or community college with the ability to receive academic credit for the internship.
- At least 1 year of experience in a food preparation position.
- Current safe food handling certification or the ability to obtain one within 90 days of hire.
- Minimum of 6 months in a supervisory role is preferred.
- Knowledge of food and beverage service, cost control, labor management, and sales techniques.
- Ability to carry small and large trays of food and beverages.
- Strong communication skills and the ability to multi-task.
- Ability to pass a background investigation and drug screen.

- Schedule: Full-time, 30-40+ hours per week, including days, evenings, weekends, and holidays.
- Compensation: This is a paid internship.
