About the role#
This is a 6-month paid internship at The American Club. You will work on-site in Kohler, Wisconsin, from May through October. This is a full-time position.
What you'll do#
- Prepare food for service according to tickets and established culinary standards.
- Produce quantities based on station production checklists to manage food costs.
- Develop daily specials and contribute to new menu concepts.
- Manage inventory, including rotating stock using the first in, first out method and conducting monthly counts.
- Oversee ordering for pastry, fabricated meats, dry goods, and produce.
- Maintain kitchen safety, including knife handling, equipment maintenance, and proper use of safety stations.
- Sanitize work areas and utensils, especially after handling raw meat, fish, or poultry.
- Lead the kitchen team when the unit chef is absent.
- Monitor food temperatures to ensure they stay out of the danger zone.
What you'll need#
- Current enrollment in a culinary degree program or relevant coursework.
- Advanced knowledge of culinary terms, techniques, and meat, fish, and poultry fabrication.
- Proficiency in breakfast cookery, vegetable prep, starches, rice, pasta, and sandwich preparation.
- Experience with restaurant, banquet buffet, ala carte, and plated banquet service.
- A completed sanitation course.
- Fluency in English.
- Ability to develop and manage production checklist systems.
- Authorization to work in the United States without sponsorship.

- Compensation: $12.80 - $20.00 per hour.
