About the role#
The Culinary Externship offers hands-on experience in a professional hotel kitchen. You will support the culinary team in preparing high-quality food while meeting the academic requirements of The Culinary Institute of America. This is a full-time, paid position.
What you'll do#
- Prepare food items using standardized recipes and production methods.
- Assist with daily mise en place including prepping proteins, vegetables, and sauces.
- Maintain food safety, sanitation, and proper handling procedures.
- Label, date, and rotate products using FIFO procedures.
- Support chefs and line cooks during service to ensure consistent plate execution.
- Develop skills in knife work, butchery, sauce preparation, and station organization.
- Help with inventory management, portion control, and food waste reduction.
- Operate and maintain kitchen equipment such as ovens, grills, and mixers.
- Keep your workstation clean and organized.
- Participate in menu tastings, team meetings, and feedback sessions.
What you'll need#
- Current enrollment at The Culinary Institute of America with an externship requirement for graduation.
- Basic understanding of culinary fundamentals and sanitation.
- Prior kitchen experience is preferred.
- Ability to stand for long periods and lift up to 50 lbs.
- Finger and hand dexterity to operate kitchen tools safely.
- Strong attention to detail and a commitment to quality.
- Effective verbal communication skills and the ability to work in a team.
- Willingness to learn, accept feedback, and adapt to the needs of the kitchen.

- This role is on-site in Los Angeles, California, or The Woodlands, Texas.
- Employment is full-time on a rolling basis.
